In-N-Out runs one of the shortest menus in American fast food. Three burgers, one order of fries, three shake flavors and a fountain wall carry the whole business, and the company has resisted adding to that list for decades. What makes the menu feel larger is the set of preparations the crew will make on request, from Animal Style to a 4x4 to a bun swapped for lettuce. How the In-N-Out menu is built

Three burgers sit on the board and each one is the last one plus a layer. The Hamburger at $3.60 is a single patty with lettuce, tomato, spread and onion. Add a slice of American cheese and it becomes the $4.10 Cheeseburger. Add a second patty and a second slice and it becomes the $5.90 Double-Double. That is the entire burger section, and the published calorie counts follow the same arithmetic at 360, 430 and 610.

The gaps between those three numbers are the most useful figures on the whole menu. A cheese slice accounts for 70 calories and a beef patty for 110, which means any larger order can be worked out before it is placed. A 3x3 is a Double-Double plus one patty and one slice, so it lands near 790 calories. A 4x4 adds two of each and lands near 970. The same logic runs through the price list, where an extra patty adds $1.30 and an extra slice adds $0.50.

The rest of the menu is deliberately narrow. One size of fries at $2.30. Three shake flavors at $3.45. A fountain wall of Coca-Cola products plus two lemonades, two teas, coffee, hot cocoa and milk. No chicken, no salads, no breakfast, no seasonal specials. The company has held that line since the first stand opened in Baldwin Park in 1948, and the short board is the reason a busy restaurant can still cut its own potatoes on site.

What the numbers say about value

Calories per dollar is a blunt measure, but on a menu this small it exposes the pattern quickly. The Double-Double delivers about 103 calories for every dollar spent, the Cheeseburger about 105 and the plain Hamburger about 100. Fries land at 157 and milk at 162. The three shakes sit around 176, which makes them the densest purchase on the board by a wide margin.

Protein tells a different story. A Double-Double carries 34 grams for $5.90, roughly 5.8 grams per dollar, and the Flying Dutchman pushes that higher by dropping the bun entirely. Milk at $0.99 returns 10 grams of protein, better per dollar than any burger on the menu. Anyone eating here on a protein target will find the Protein Style builds more useful than the bunned versions, since a Protein Style Double-Double keeps 30 grams of protein while dropping from 42 grams of carbohydrate to 12.

Sodium is where the menu gets heavy. The Double-Double carries 1,670 milligrams, which is most of a 2,300 milligram daily reference on its own. Switching to mustard and ketchup pulls that to 1,600 and Protein Style pulls it to 1,390. Fries are the outlier in the other direction at 150 milligrams, low enough that the side is rarely the problem in a full meal.

The off menu orders and what they cost

In-N-Out publishes a short list of unlisted orders on its own website and calls it the not so secret menu, which is the reason a crew member never blinks when someone asks for Animal Style. The list splits into two kinds. Free preparations change how an existing item is made, and paid builds add real ingredients that get rung up.

Animal Style, Protein Style, chopped chilis, extra toast and well done fries all cost nothing. A 3x3 at about $7.70, a 4x4 at about $9.50 and Animal Style fries at about $4.60 are charged. Reading the nutrition sheet properly

The published sheet reports burgers three ways, and the difference matters more than most people expect. The default with onion row uses spread, the company thousand island style sauce, and that sauce is doing real work in the calorie column. Swapping it for mustard and ketchup removes 60 calories and 6 grams of fat from a Hamburger, and 60 calories and 7 grams of fat from a Double-Double, at no cost.

Protein Style replaces the bun with lettuce leaves and removes almost the entire carbohydrate load. A Hamburger drops from 38 grams of carbohydrate to 9, and a Double-Double from 42 to 12. Calories fall by 150 on both. The sodium reduction is the part that gets missed, since the bun and its salt come out with it. A Protein Style Double-Double sits at 1,390 milligrams against 1,670 for the standard build.

Fountain drinks are reported by cup size with and without ice, which is unusual and worth knowing. A medium Coca-Cola with ice is 180 calories at 15 ounces. The same medium cup without ice holds 20 ounces and reaches 240. Every figure on the drinks page uses the with ice column, since that is how the drink is actually handed over.
